Blueberry-Seed "Granola" Cereal

Ingredients

  • 1½ cups raw sunflower kernels
  • 1 cup shelled raw pepitas (pumpkin seeds)
  • 1 cup unsweetened dried blueberries
  • ½ cup pure maple syrup
  • 1½ tsp pure vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 1 (13.5-oz) can unsweetened coconut milk

Instructions

  1. Preheat oven to 350°F. Combine all ingredients except coconut milk on a large rimmed baking sheet; toss and spread seed mixture in a single layer.
  2. Bake 12 to 15 minutes or until seeds are golden, stirring halfway through baking. Cool seed mixture on baking sheet on a wire rack. Break seed mixture into large pieces.
  3. Divide "granola" among 4 bowls; serve with coconut milk.
