Blueberry-Seed "Granola" Cereal

Ingredients
- 1½ cups raw sunflower kernels
- 1 cup shelled raw pepitas (pumpkin seeds)
- 1 cup unsweetened dried blueberries
- ½ cup pure maple syrup
- 1½ tsp pure vanilla extract
- ½ tsp ground cinnamon
- ¼ tsp salt
- 1 (13.5-oz) can unsweetened coconut milk
Instructions
- Preheat oven to 350°F. Combine all ingredients except coconut milk on a large rimmed baking sheet; toss and spread seed mixture in a single layer.
- Bake 12 to 15 minutes or until seeds are golden, stirring halfway through baking. Cool seed mixture on baking sheet on a wire rack. Break seed mixture into large pieces.
- Divide "granola" among 4 bowls; serve with coconut milk.
