Southern Beef-and-Black-Eyed Pea Salad

Ingredients

  • Reserved cooked beef (from Beef Tostadas with Citrus Salsa recipe)
  • 2 (12-oz) pkg chopped romaine lettuce
  • 2 organic tomatoes, seeded and chopped
  • 2 carrots, peeled and shredded
  • 1 organic English cucumber, chopped
  • 1 (15.5-oz) can BPA-free black-eyed peas, drained and rinsed
  • 1 (8-oz) bottle organic Ranch dressing

Instructions

  1. Preheat oven to 450°F. Wrap beef in aluminum foil.
  2. Bake 15 minutes or until thoroughly heated.
  3. Toss together lettuce and next 4 ingredients in a large bowl; arrange on serving plates. Top with beef. Drizzle with desired amount of dressing.

Side Dish Ingredients

  • 2 organic Gala apples, sliced
  • 1 lb organic red or green seedless grapes, cut in half
  • 1 Tbsp honey
  • 1 Tbsp fresh lemon juice

Side Dish Instructions

  1. Toss together all ingredients until blended.
