Southern Beef-and-Black-Eyed Pea Salad
Simple Fruit Salad
Ingredients
- Reserved cooked beef (from Beef Tostadas with Citrus Salsa recipe)
- 2 (12-oz) pkg chopped romaine lettuce
- 2 organic tomatoes, seeded and chopped
- 2 carrots, peeled and shredded
- 1 organic English cucumber, chopped
- 1 (15.5-oz) can BPA-free black-eyed peas, drained and rinsed
- 1 (8-oz) bottle organic Ranch dressing
Instructions
- Preheat oven to 450°F. Wrap beef in aluminum foil.
- Bake 15 minutes or until thoroughly heated.
- Toss together lettuce and next 4 ingredients in a large bowl; arrange on serving plates. Top with beef. Drizzle with desired amount of dressing.
Side Dish Ingredients
- 2 organic Gala apples, sliced
- 1 lb organic red or green seedless grapes, cut in half
- 1 Tbsp honey
- 1 Tbsp fresh lemon juice
Side Dish Instructions
- Toss together all ingredients until blended.
