Pesto Pasta with Shrimp

Ingredients

  • 1 (16-oz) pkg linguine
  • 2 Tbsp butter
  • 1½ lb peeled and deveined shrimp
  • 1½ cups heavy cream
  • 1 (8-oz) jar pesto
  • 1 cup shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, melt butter in a large nonstick skillet over medium-high heat. Season shrimp lightly with salt and pepper. Add shrimp to skillet, and cook, stirring, until shrimp turn pink and are firm. Remove from skillet, and keep warm.
  3. Add cream and pesto to skillet; cook, stirring occasionally, until slightly thickened. Toss with pasta, shrimp, and cheese.

  • 1 (12-oz) pkg frozen green beans
  • 2 Tbsp butter

Side Dish Instructions

  1. Steam green beans according to package directions; toss with butter, and season with salt and pepper to taste.
