Key Lime Pie Bites

Ingredients

  • ½ cup salted macadamia nut halves
  • 7 Tbsp powdered erythritol sugar substitute (such as Swerve), divided
  • ¼ cup almond flour
  • 2 Tbsp butter, melted
  • ¼ tsp salt
  • ½ cup coconut oil, softened
  • 4 oz cream cheese, softened
  • 3 Tbsp key lime juice

Instructions

  1. Preheat oven to 350 degrees.
  2. Place nuts in a food processor; cover and process just until finely chopped. Add 1½ Tbsp sugar substitute, flour, butter, and salt; pulse until well blended. .
  3. Press to cover the bottom of an 8-in pan; bake 10 minute or until golden brown. Cool completely; then crumble to resemble coarse crumbs.
  4. Beat together coconut oil, cream cheese, lime juice, and 5½ Tbsp sugar substitute in a mixing bowl with an electric mixer at low speed until well blended.
  5. Roll mixture into 12 balls, using 1 rounded Tbsp for each ball, then roll in cooled nut mixture, pressing to adhere crumbs.
  6. Freeze balls until firm. Wrap and store in refrigerator up to 5 days.
