Brownie Bites with Cream Cheese Frosting

Ingredients
- ½ cup butter, melted
- ¾ cup powdered erythritol sugar substitute (such as Swerve), divided
- 2 large eggs
- ¾ tsp vanilla extract, divided
- 1 cup finely ground almond flour
- ⅓ cup cocoa
- 1 tsp baking powder
- ½ tsp kosher salt
- ¼ cup sugar-free dark chocolate chips (such as Lily's or Hershey Kitchen)
- Baking spray
- 4 oz cream cheese, softened
- 2 Tbsp butter, softened
- 2 to 3 Tbsp heavy cream
Instructions
- Preheat oven to 350 degrees.
- Beat melted butter and 7 Tbsp sugar substitute in a large bowl with an eletric mixer at low speed until blended. Add eggs and ½ tsp vanilla, mixing well.
- Combine flour, cocoa, baking powder, and salt in a small bowl; add to butter mixture, stirring until combined. Fold in chocolate chips.
- Lightly coat mini muffin tins with baking spray; spoon 1½ Tbsp batter into 16 muffin cups.
- Bake 9 to 11 minutes or until rounded and set in middle; let cool 10 minutes in pan. Cool completely on wire rack.
- Beat cream cheese, softened butter, 5 Tbsp sugar substitute, and ¼ tsp vanilla in a mixing bowl with an electric mixer at medium speed until blended adding cream, 1 Tbsp at a time, as needed to reach desired consistency.
- Dollop or spread 2 tsp frosting on top of each brownie bite; store in refrigerator.
- Makes 16 brownie bites.
