Brownie Bites with Cream Cheese Frosting

Ingredients

  • ½ cup butter, melted
  • ¾ cup powdered erythritol sugar substitute (such as Swerve), divided
  • 2 large eggs
  • ¾ tsp vanilla extract, divided
  • 1 cup finely ground almond flour
  • ⅓ cup cocoa
  • 1 tsp baking powder
  • ½ tsp kosher salt
  • ¼ cup sugar-free dark chocolate chips (such as Lily's or Hershey Kitchen)
  • Baking spray
  • 4 oz cream cheese, softened
  • 2 Tbsp butter, softened
  • 2 to 3 Tbsp heavy cream

Instructions

  1. Preheat oven to 350 degrees.
  2. Beat melted butter and 7 Tbsp sugar substitute in a large bowl with an eletric mixer at low speed until blended. Add eggs and ½ tsp vanilla, mixing well.
  3. Combine flour, cocoa, baking powder, and salt in a small bowl; add to butter mixture, stirring until combined. Fold in chocolate chips.
  4. Lightly coat mini muffin tins with baking spray; spoon 1½ Tbsp batter into 16 muffin cups.
  5. Bake 9 to 11 minutes or until rounded and set in middle; let cool 10 minutes in pan. Cool completely on wire rack.
  6. Beat cream cheese, softened butter, 5 Tbsp sugar substitute, and ¼ tsp vanilla in a mixing bowl with an electric mixer at medium speed until blended adding cream, 1 Tbsp at a time, as needed to reach desired consistency.
  7. Dollop or spread 2 tsp frosting on top of each brownie bite; store in refrigerator.
  8. Makes 16 brownie bites.
