Chicken-Couscous-Chickpea Salad

Ingredients
- 1¼ cups whole wheat couscous
- 1 (15-oz) can chickpeas, drained and rinsed
- 1 cup shredded rotisserie chicken breast
- 1 cup grape tomatoes, halved
- ¼ cup chopped fresh parsley
- 2 Tbsp lemon juice
- 2 Tbsp extra virgin olive oil
- 1 clove garlic, minced
- 1½ tsp ground cumin
- ½ tsp paprika
- ¼ tsp salt
- ⅛ tsp pepper
Instructions
- Cook couscous according to package directions. Stir in chickpeas, chicken, tomatoes, and parsley.
- Whisk together lemon juice, oil, garlic, cumin, paprika, salt, and pepper in a bowl. Pour over couscous; toss. Chill until ready to serve.
