Chicken-Couscous-Chickpea Salad

Ingredients

  • 1¼ cups whole wheat couscous
  • 1 (15-oz) can chickpeas, drained and rinsed
  • 1 cup shredded rotisserie chicken breast
  • 1 cup grape tomatoes, halved
  • ¼ cup chopped fresh parsley
  • 2 Tbsp lemon juice
  • 2 Tbsp extra virgin olive oil
  • 1 clove garlic, minced
  • 1½ tsp ground cumin
  • ½ tsp paprika
  • ¼ tsp salt
  • ⅛ tsp pepper

Instructions

  1. Cook couscous according to package directions. Stir in chickpeas, chicken, tomatoes, and parsley.
  2. Whisk together lemon juice, oil, garlic, cumin, paprika, salt, and pepper in a bowl. Pour over couscous; toss. Chill until ready to serve.
