Almond, Chocolate, and Cranberry Breakfast Bars
Ingredients
- 1 cup pitted dates
- ½ cup unsweetened dried cranberries (such as Natural Healing House)
- ⅓ cup unsweetened baking cocoa
- ⅓ cup chia seeds
- 1 tsp pure vanilla extract
- ⅛ tsp salt
- 1 cup raw whole almonds, coarsely chopped
Instructions
- Process dates in a food processor until a paste forms. Add cranberries, cocoa, chia seeds, vanilla, and salt; pulse until blended.
- Add nuts; pulse until nuts are finely chopped and well blended.
- Transfer date mixture to a large sheet of wax paper; press mixture into a ½-inch-thick rectangle. Wrap tightly, and chill overnight.
- Unwrap; cut into 8 bars. Serve immediately, or store in refrigerator for up to 3 days.
