Almond, Chocolate, and Cranberry Breakfast Bars

Ingredients

  • 1 cup pitted dates
  • ½ cup unsweetened dried cranberries (such as Natural Healing House)
  • ⅓ cup unsweetened baking cocoa
  • ⅓ cup chia seeds
  • 1 tsp pure vanilla extract
  • ⅛ tsp salt
  • 1 cup raw whole almonds, coarsely chopped

Instructions

  1. Process dates in a food processor until a paste forms. Add cranberries, cocoa, chia seeds, vanilla, and salt; pulse until blended.
  2. Add nuts; pulse until nuts are finely chopped and well blended.
  3. Transfer date mixture to a large sheet of wax paper; press mixture into a ½-inch-thick rectangle. Wrap tightly, and chill overnight.
  4. Unwrap; cut into 8 bars. Serve immediately, or store in refrigerator for up to 3 days.
