Peach-Blueberry Smoothie Bowls

Ingredients

  • ¼ cup chopped raw almonds
  • 2½ cups frozen (thawed) sliced peaches (or use fresh)
  • ¾ cup unsweetened coconut milk
  • 1 tsp lemon zest
  • ⅓ cup fresh lemon juice
  • ¼ cup raw honey
  • 1½ cups crushed ice
  • 1 (4.4-oz) pkg blueberries
  • 2 Tbsp chia seeds

Instructions

  1. Toast nuts in a nonstick skillet over medium-high heat 3 to 4 minutes or until fragrant.
  2. Coarsely chop all but 1 cup peach slices. Process chopped peaches, milk, lemon zest, lemon juice, honey, and ice in a blender until smooth, scraping sides as needed.
  3. Pour into 4 bowls; top with peach slices, blueberries, nuts, and chia seeds.
