Flank Steak with Parsley-Garlic Sauce

Ingredients

  • ½ cup packed fresh parsley
  • 1 Tbsp extra virgin olive oil
  • 1½ tsp water
  • 1 tsp lemon zest
  • 1 Tbsp lemon juice
  • ⅛ tsp salt
  • Dash of cayenne pepper
  • 2 cloves garlic, minced
  • 1 lb flank steak, trimmed
  • 1½ tsp Montreal steak seasoning

Instructions

  1. Preheat grill or grill pan to medium-high heat. Pulse first 8 ingredients in a food processor or blender until finely chopped.
  2. Sprinkle steak with seasoning. Grill, covered with grill lid, 5 to 7 minutes per side or to desired doneness.
  3. Let stand 5 minutes before thinly slicing across the grain. Spoon sauce over steak before serving.

Side Dish Ingredients

  • 1 small yellow squash, sliced diagonally ¼-inch thick
  • 1 small zucchini, sliced diagonally ¼-inch thick
  • ½ eggplant, sliced into ½-inch-thick rounds
  • ½ red onion, sliced into ½-inch rounds
  • 1 yellow bell pepper, cut into 6 strips
  • ¼ cup olive oil
  • ¼ cup balsamic vinegar, divided
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat grill or grill pan to medium-high heat. Toss vegetables with oil and 2 Tbsp vinegar; sprinkle with salt and pepper.
  2. Grill vegetables 2 minutes per side or until tender. Toss with 2 Tbsp vinegar.
