Steak with Basil-Blue Cheese Butter

Ingredients

  • ¾ lb top sirloin steak (about 1½ inches thick)
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp butter, softened
  • 2 oz crumbled blue cheese
  • 1 Tbsp chopped fresh basil

Instructions

  1. Preheat grill or grill pan to medium-high heat. Sprinkle steak with salt and pepper.
  2. Grill steak, covered with grill lid, 8 minutes per side or to desired doneness.
  3. Cover with foil, and let stand 5 to 10 minutes; cut into 3 equal servings.
  4. Meanwhile, stir together butter, cheese, and basil. Smear over steaks before serving.

  • 1 (12-oz) pkg frozen spiralized butternut squash (such as Green Giant)
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • 2 Tbsp chopped fresh parsley
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook squash and garlic in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes or until tender. Sprinkle with parsley, salt, and pepper.
