Steak with Basil-Blue Cheese Butter
Butternut Squash "Noodles"Ingredients
- ¾ lb top sirloin steak (about 1½ inches thick)
- ¼ tsp salt
- ¼ tsp pepper
- 2 Tbsp butter, softened
- 2 oz crumbled blue cheese
- 1 Tbsp chopped fresh basil
Instructions
- Preheat grill or grill pan to medium-high heat. Sprinkle steak with salt and pepper.
- Grill steak, covered with grill lid, 8 minutes per side or to desired doneness.
- Cover with foil, and let stand 5 to 10 minutes; cut into 3 equal servings.
- Meanwhile, stir together butter, cheese, and basil. Smear over steaks before serving.
Side Dish Ingredients
- 1 (12-oz) pkg frozen spiralized butternut squash (such as Green Giant)
- 1 clove garlic, minced
- 1 Tbsp olive oil
- 2 Tbsp chopped fresh parsley
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook squash and garlic in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes or until tender. Sprinkle with parsley, salt, and pepper.
