Fish "Tacos" with Mango Salsa

Ingredients

  • 1 mango, pitted and diced
  • 1 red bell pepper, chopped
  • ¼ cup chopped red onion
  • ¼ cup chopped fresh cilantro
  • 3 Tbsp fresh lime juice, divided
  • ½ cup avocado-oil mayonnaise (or use a homemade Paleo mayonnaise)
  • 1 tsp ground chipotle chile pepper
  • 1 tsp ground cumin
  • ¾ tsp paprika
  • 3 cloves garlic, minced
  • 1½ lb mahi mahi fillets
  • 2 Tbsp avocado oil
  • 12 cabbage leaves
  • 2 avocados, sliced

Instructions

  1. Combine mango, bell pepper, onion, cilantro, 2 Tbsp lime juice, and salt and pepper to taste in a bowl.
  2. Combine mayonnaise, 1 Tbsp lime juice, chipotle pepper, and salt and pepper to taste in a bowl.
  3. Combine cumin, paprika, and garlic; rub on fish. Sprinkle lightly with salt and pepper.
  4. Cook fish in hot oil in a large nonstick skillet over medium-high heat 2 to 3 minutes per side or until fish flakes with a fork.
  5. Break fish into large pieces. Serve on cabbage leaves with avocado, mayonnaise mixture, and mango salsa.

Side Dish Ingredients

  • 1½ cups coconut oil
  • 3 green plantains
  • 1 tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Melt oil in a large skillet over medium heat. Peel plantains, and cut crosswise into 1-inch pieces.
  2. Cook plantains in hot oil 1 minute per side or until golden. Transfer to a bowl using a slotted spoon. Toss with salt and pepper.
