Fish "Tacos" with Mango Salsa
Plantain Chips
Ingredients
- 1 mango, pitted and diced
- 1 red bell pepper, chopped
- ¼ cup chopped red onion
- ¼ cup chopped fresh cilantro
- 3 Tbsp fresh lime juice, divided
- ½ cup avocado-oil mayonnaise (or use a homemade Paleo mayonnaise)
- 1 tsp ground chipotle chile pepper
- 1 tsp ground cumin
- ¾ tsp paprika
- 3 cloves garlic, minced
- 1½ lb mahi mahi fillets
- 2 Tbsp avocado oil
- 12 cabbage leaves
- 2 avocados, sliced
Instructions
- Combine mango, bell pepper, onion, cilantro, 2 Tbsp lime juice, and salt and pepper to taste in a bowl.
- Combine mayonnaise, 1 Tbsp lime juice, chipotle pepper, and salt and pepper to taste in a bowl.
- Combine cumin, paprika, and garlic; rub on fish. Sprinkle lightly with salt and pepper.
- Cook fish in hot oil in a large nonstick skillet over medium-high heat 2 to 3 minutes per side or until fish flakes with a fork.
- Break fish into large pieces. Serve on cabbage leaves with avocado, mayonnaise mixture, and mango salsa.
Side Dish Ingredients
- 1½ cups coconut oil
- 3 green plantains
- 1 tsp salt
- ½ tsp pepper
Side Dish Instructions
- Melt oil in a large skillet over medium heat. Peel plantains, and cut crosswise into 1-inch pieces.
- Cook plantains in hot oil 1 minute per side or until golden. Transfer to a bowl using a slotted spoon. Toss with salt and pepper.
