Chicken and Coleslaw Pitas

Ingredients

  • 1 (10-oz) pkg angel hair coleslaw
  • ½ cup chopped baby carrots
  • 1 (8-oz) can BPA-free sliced water chestnuts
  • ¼ cup sliced green onions
  • ½ Tbsp minced ginger
  • 1½ Tbsp rice vinegar
  • ½ Tbsp olive oil
  • 1 tsp sesame oil
  • ¼ tsp honey
  • ⅛ tsp salt
  • Reserved 1½ cups cooked chicken (from Easy Sesame Chicken recipe)
  • 2 pita bread rounds (preferably whole wheat), halved

Instructions

  1. Stir together all ingredients except chicken and pitas in a large bowl; let stand 10 minutes.
  2. Stir chicken into slaw mixture. Fill pita pockets with chicken mixture.

Side Dish Ingredients

  • 1 organic English cucumber, cut into 1-inch pieces
  • 2 organic tomatoes, cut into 1-inch pieces
  • 2 Tbsp rice vinegar
  • 1 tsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 1 tsp honey

Side Dish Instructions

  1. Place cucumbers and tomatoes in a bowl; add remaining ingredients, tossing to coat. Let stand 15 minutes before serving.
