Asian Steak Noodle Bowl

Ingredients
- 8 oz buckwheat soba noodles
- 1 lb sirloin steak
- Kosher salt
- pepper
- 1 Tbsp olive oil
- 2 Tbsp rice wine vinegar
- 2 tsp sesame oil
- 1 tsp chili paste
- 1 cup spiralized carrots (thawed if frozen)
- 1 cup frozen shelled edamame (thawed)
- ½ cup mint leaves
- ½ cup cilantro leaves
- Toasted sesame seeds and sliced scallions, for serving
Instructions
- Cook noodles per pkg. directions. Rinse with cold water and refrigerate.
- Meanwhile, pat steak dry and season with salt and pepper. Heat large skillet on medium-high. Add oil, then steak and cook to desired doneness, 5 to 7 min. per side for medium. Let rest at least 5 min. before slicing.
- In a large bowl, whisk together vinegar, sesame oil, chili paste, and ½ tsp salt. Add soba noodles and spiraled carrots, and toss to coat. Fold in edamame, mint and cilantro. Top with sliced steak, sesame seeds, and scallions.
