Asian Steak Noodle Bowl

Ingredients

  • 8 oz buckwheat soba noodles
  • 1 lb sirloin steak
  • Kosher salt
  • pepper
  • 1 Tbsp olive oil
  • 2 Tbsp rice wine vinegar
  • 2 tsp sesame oil
  • 1 tsp chili paste
  • 1 cup spiralized carrots (thawed if frozen) 
  • 1 cup frozen shelled edamame (thawed) 
  • ½ cup mint leaves
  • ½ cup cilantro leaves
  • Toasted sesame seeds and sliced scallions, for serving

Instructions

  1. Cook noodles per pkg. directions. Rinse with cold water and refrigerate.
  2. Meanwhile, pat steak dry and season with salt and pepper. Heat large skillet on medium-high. Add oil, then steak and cook to desired doneness, 5 to 7 min. per side for medium. Let rest at least 5 min. before slicing.
  3. In a large bowl, whisk together vinegar, sesame oil, chili paste, and ½ tsp salt. Add soba noodles and spiraled carrots, and toss to coat. Fold in edamame, mint and cilantro. Top with sliced steak, sesame seeds, and scallions.
