Pork and Vegetable Stir-Fry

Ingredients

  • 1 cup apricot preserves
  • 6 Tbsp soy sauce
  • 2 Tbsp cornstarch
  • 1½ lb pork tenderloin, trimmed, and cut into ½-inch pieces
  • 2 Tbsp vegetable oil, divided
  • 1 (!2-oz) pkg broccoli florets
  • 1 (16-oz) pkg frozen sugar snap pea stir-fry

Instructions

  1. Whisk together apricot preserves, soy sauce, and cornstarch in a small bowl; set aside.
  2. Lightly season pork with salt and pepper; cook pork in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat until browned. Remove from skillet, and set aside.
  3. Cook broccoli and stir-fry in 1 Tbsp hot oil in same skillet over medium-high heat, stirring, 4 minutes or until crisp-tender. Return pork to skillet, and stir in apricot mixture.
  4. Cook, stirring, 2 to 3 minutes or until sauce is thickened and vegetables are tender. Serve over Green Onion Rice recipe.

  • 2 (8.8-oz) pouches microwavable jasmine rice
  • 2 green onions, minced

Side Dish Instructions

  1. Heat rice according to package directions; stir in green onion.
