Ground Beef Taco Bowls

Ingredients

  • 1½ lb ground beef
  • ½ cup chopped onion
  • 1 (12.5-oz) pkg soft-taco dinner kit
  • ⅓ cup water
  • 2 (8.5-oz) pouches microwavable brown rice
  • 2 (9.1-oz) pkg Southwest chopped salad kits
  • 2 tomatoes, chopped
  • 1 avocado, sliced
  • ¼ cup chopped fresh cilantro

Instructions

  1. Cook beef and onion in a large nonstick skillet until beef is browned and crumbly. Add taco seasoning mix (from kit), and water; bring to a boil, reduce heat, and simmer until very thick.
  2. Meanwhile, cook rice according to package directions; divide among 6 bowls.
  3. Combine salad and dressing from salad kit; spoon into bowls, and top with beef mixture. Top with tomatoes, avocado, cilantro, salad kit toppings, and taco sauce (from kit).
  4. Heat soft taco shells (from kit) according to package directions. Serve with taco bowls.
