Mushroom Meat Loaf

Sour Cream Mashed Potatoes and Steamed Green Beans

Ingredients

  • 1 (12-oz) pkg sliced mushrooms, chopped
  • 1 yellow onion, chopped
  • 1 clove garlic, minced
  • 3 Tbsp olive oil
  • 2 Tbsp organic tomato paste
  • ¾ cup breadcrumbs (preferably whole wheat)
  • 1 Tbsp Italian seasoning
  • ½ tsp salt
  • ½ tsp pepper
  • 2 large eggs, lightly beaten
  • 1½ lb ground round

Instructions

  1. Preheat oven to 450°F. Cook mushrooms, onion, and garlic in hot oil in a large nonstick skillet over medium heat 10 minutes or until tender; transfer to a large bowl.
  2. Stir in tomato paste, breadcrumbs, seasoning, salt, pepper, and eggs; add beef, and gently combine.
  3. Spoon mixture into a lightly greased 9-inch loaf pan. Bake 45 minutes to 1 hour or until center is no longer pink. Drain, if needed, before serving.

Side Dish Ingredients

  • 2 lb organic Yukon Gold potatoes, peeled and cut into 1-inch pieces
  • ½ cup milk
  • 1 (8-oz) carton sour cream
  • 2 green onions, sliced
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 2 (12-oz) pkg trimmed green beans

Side Dish Instructions

  1. Bring potatoes and salted water to cover to a boil in a large Dutch oven. Cook 20 minutes or until tender; drain. Mash potatoes to desired consistency.
  2. Stir in milk, sour cream, onions, and ½ tsp each salt and pepper.
  3. Cook green beans according to package directions; toss with ¼ tsp each salt and pepper.
