Mushroom Meat Loaf
Sour Cream Mashed Potatoes and Steamed Green BeansIngredients
- 1 (12-oz) pkg sliced mushrooms, chopped
- 1 yellow onion, chopped
- 1 clove garlic, minced
- 3 Tbsp olive oil
- 2 Tbsp organic tomato paste
- ¾ cup breadcrumbs (preferably whole wheat)
- 1 Tbsp Italian seasoning
- ½ tsp salt
- ½ tsp pepper
- 2 large eggs, lightly beaten
- 1½ lb ground round
Instructions
- Preheat oven to 450°F. Cook mushrooms, onion, and garlic in hot oil in a large nonstick skillet over medium heat 10 minutes or until tender; transfer to a large bowl.
- Stir in tomato paste, breadcrumbs, seasoning, salt, pepper, and eggs; add beef, and gently combine.
- Spoon mixture into a lightly greased 9-inch loaf pan. Bake 45 minutes to 1 hour or until center is no longer pink. Drain, if needed, before serving.

- 2 lb organic Yukon Gold potatoes, peeled and cut into 1-inch pieces
- ½ cup milk
- 1 (8-oz) carton sour cream
- 2 green onions, sliced
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 2 (12-oz) pkg trimmed green beans
Side Dish Instructions
- Bring potatoes and salted water to cover to a boil in a large Dutch oven. Cook 20 minutes or until tender; drain. Mash potatoes to desired consistency.
- Stir in milk, sour cream, onions, and ½ tsp each salt and pepper.
- Cook green beans according to package directions; toss with ¼ tsp each salt and pepper.
