Pork and Pineapple Kabobs
Grilled Spicy Sweet Potato Packet
Ingredients
- 2 lb pork tenderloin, cut into 1½-inch pieces
- 1 (16-oz) container pineapple chunks
- 2 Tbsp olive oil
- 1 tsp chili powder
- ½ tsp salt
- ½ tsp pepper
- 4 green onions, cut into 3-inch pieces
Instructions
- Combine pork, pineapple, oil, chili powder, salt, and pepper in a large bowl; toss.
- Preheat grill to medium-high heat. Alternately thread pork, pineapple, and onions onto metal skewers.
- Grill kabobs, 12 to 15 minutes, turning occasionally, until pork is done.

- 3 lb sweet potatoes, cut into bite-size chunks
- 2 Tbsp olive oil
- 2 Tbsp maple syrup
- ¼ tsp salt
- ¼ tsp cayenne pepper
Side Dish Instructions
- Preheat grill to medium-high heat. Toss potatoes, oil, maple syrup, salt, and cayenne pepper on a large sheet of heavy-duty foil; seal foil.
- Grill over indirect heat 15 to 20 minutes or until potatoes are tender.
