Pork and Pineapple Kabobs

Ingredients

  • 2 lb pork tenderloin, cut into 1½-inch pieces
  • 1 (16-oz) container pineapple chunks
  • 2 Tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp salt
  • ½ tsp pepper
  • 4 green onions, cut into 3-inch pieces

Instructions

  1. Combine pork, pineapple, oil, chili powder, salt, and pepper in a large bowl; toss.
  2. Preheat grill to medium-high heat. Alternately thread pork, pineapple, and onions onto metal skewers.
  3. Grill kabobs, 12 to 15 minutes, turning occasionally, until pork is done.

  • 3 lb sweet potatoes, cut into bite-size chunks
  • 2 Tbsp olive oil
  • 2 Tbsp maple syrup
  • ¼ tsp salt
  • ¼ tsp cayenne pepper

Side Dish Instructions

  1. Preheat grill to medium-high heat. Toss potatoes, oil, maple syrup, salt, and cayenne pepper on a large sheet of heavy-duty foil; seal foil.
  2. Grill over indirect heat 15 to 20 minutes or until potatoes are tender.
