Thyme-Citrus Roasted Chicken
Creamy Broccoli-Kale SlawIngredients
- 1 lemon, sliced
- 1 orange, sliced
- 3 Tbsp avocado oil
- 4 cloves garlic, thinly sliced
- 10 sprigs fresh thyme
- 2 onions, cut into wedges
- 6 bone-in, skin-on chicken thighs
- 6 skin-on chicken legs
- 1 tsp kosher salt
- ½ tsp crushed red pepper
Instructions
- Preheat oven to 400°F. Toss together first 6 ingredients in a large bowl; transfer to a 13- x 9-inch pan.
- Arrange chicken in a single layer, skin sides up, in pan. Sprinkle with salt and red pepper.
- Bake 1 hour or until chicken is browned and done.
Side Dish Ingredients
- 1 (12-oz) pkg broccoli slaw
- 1 (5-oz) pkg baby kale
- 1 cup seedless red grapes, halved
- ⅓ cup avocado-oil mayonnaise (or use a homemade Paleo mayonnaise)
- 1 Tbsp raw honey
- 1 Tbsp apple cider vinegar
- ¼ tsp kosher salt
Side Dish Instructions
- Combine slaw, kale, and grapes in a bowl.
- Whisk together mayonnaise, honey, vinegar, and salt; pour over broccoli mixture, and toss.
