Thyme-Citrus Roasted Chicken

Ingredients

  • 1 lemon, sliced
  • 1 orange, sliced
  • 3 Tbsp avocado oil
  • 4 cloves garlic, thinly sliced
  • 10 sprigs fresh thyme
  • 2 onions, cut into wedges
  • 6 bone-in, skin-on chicken thighs
  • 6 skin-on chicken legs
  • 1 tsp kosher salt
  • ½ tsp crushed red pepper

Instructions

  1. Preheat oven to 400°F. Toss together first 6 ingredients in a large bowl; transfer to a 13- x 9-inch pan.
  2. Arrange chicken in a single layer, skin sides up, in pan. Sprinkle with salt and red pepper.
  3. Bake 1 hour or until chicken is browned and done.

Side Dish Ingredients

  • 1 (12-oz) pkg broccoli slaw
  • 1 (5-oz) pkg baby kale
  • 1 cup seedless red grapes, halved
  • ⅓ cup avocado-oil mayonnaise (or use a homemade Paleo mayonnaise)
  • 1 Tbsp raw honey
  • 1 Tbsp apple cider vinegar
  • ¼ tsp kosher salt

Side Dish Instructions

  1. Combine slaw, kale, and grapes in a bowl.
  2. Whisk together mayonnaise, honey, vinegar, and salt; pour over broccoli mixture, and toss.
