BLT Wedge Sandwich
Ingredients
- ½ small red onion, thinly sliced
- 2 Tbsp red wine vinegar
- Kosher salt
- Pepper
- 6 slices bacon
- ¼ cup prepared blue cheese dressing
- 8 slices Pullman or sourdough bread
- 8 leaves iceberg lettuce
- 2 small cooked chicken breasts, sliced
- 1 large tomato, sliced
Instructions
- In a small bowl, toss red onion with vinegar and a pinch each salt and pepper. Let sit, tossing occasionally, for at least 10 minutes.
- Meanwhile, cook bacon in a large skillet until crisp, about 6 minutes. Transfer to a paper towel-lined plate.
- Spread blue cheese on one side of each slice of bread. Then layer with lettuce, chicken, onion, bacon and tomato. Sandwich with remaining bread.
