BLT Wedge Sandwich

Ingredients

  • ½ small red onion, thinly sliced
  • 2 Tbsp red wine vinegar
  • Kosher salt
  • Pepper
  • 6 slices bacon
  • ¼ cup prepared blue cheese dressing
  • 8 slices Pullman or sourdough bread
  • 8 leaves iceberg lettuce
  • 2 small cooked chicken breasts, sliced
  • 1 large tomato, sliced

Instructions

  1. In a small bowl, toss red onion with vinegar and a pinch each salt and pepper. Let sit, tossing occasionally, for at least 10 minutes.
  2. Meanwhile, cook bacon in a large skillet until crisp, about 6 minutes. Transfer to a paper towel-lined plate.
  3. Spread blue cheese on one side of each slice of bread. Then layer with lettuce, chicken, onion, bacon and tomato. Sandwich with remaining bread.
