Salmon with Dill-Yogurt Sauce

Ingredients

  • 6 (6-oz) salmon fillets
  • 3 Tbsp olive oil, divided
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ cup plain Greek yogurt
  • 3 Tbsp lemon juice
  • 2 Tbsp chopped fresh dill

Instructions

  1. Coat fish with 1 Tbsp oil, and sprinkle with garlic powder and salt.
  2. Cook fish, in batches, in 1 Tbsp hot oil per batch in a large skillet over medium-high heat 4 to 5 minutes until browned and crisp. Flip and cook 3 minutes or until fish flakes with a fork.
  3. Meanwhile, combine yogurt, lemon juice, and dill. Serve with fish.

Side Dish Ingredients

  • 2 (8.5-oz) pouches microwavable basmati rice
  • ⅓ cup golden raisins (or use dried cranberries)
  • ⅓ cup chopped pistachios
  • ¼ cup olive oil
  • 1 Tbsp ground turmeric
  • ¾ tsp salt

Side Dish Instructions

  1. Cook rice according to package directions. Stir in remaining ingredients.
