Salmon with Dill-Yogurt Sauce
Fruit and Nut Basmati Rice
Ingredients
- 6 (6-oz) salmon fillets
- 3 Tbsp olive oil, divided
- ½ tsp garlic powder
- ½ tsp salt
- ½ cup plain Greek yogurt
- 3 Tbsp lemon juice
- 2 Tbsp chopped fresh dill
Instructions
- Coat fish with 1 Tbsp oil, and sprinkle with garlic powder and salt.
- Cook fish, in batches, in 1 Tbsp hot oil per batch in a large skillet over medium-high heat 4 to 5 minutes until browned and crisp. Flip and cook 3 minutes or until fish flakes with a fork.
- Meanwhile, combine yogurt, lemon juice, and dill. Serve with fish.
Side Dish Ingredients
- 2 (8.5-oz) pouches microwavable basmati rice
- ⅓ cup golden raisins (or use dried cranberries)
- ⅓ cup chopped pistachios
- ¼ cup olive oil
- 1 Tbsp ground turmeric
- ¾ tsp salt
Side Dish Instructions
- Cook rice according to package directions. Stir in remaining ingredients.
