Skillet Mozzarella Chicken Caprese

Ingredients

  • 2 (6-oz) boneless, skinless chicken breasts
  • 1 Tbsp extra virgin olive oil
  • 1 cup all-natural marinara sauce (such as Rao's)
  • 2 oz fresh mozzarella cheese, sliced
  • 1 cup grape tomatoes, cut in half
  • ¼ cup fresh basil, thinly sliced
  • 1 Tbsp balsamic glaze (or use balsamic vinegar) 

Instructions

  1. Preheat broiler.
  2. Cook chicken in hot oil in a large cast-iron skillet over medium-high heat 4 minutes per side.
  3. Spoon marinara sauce over and around chicken; cook 5 minutes.
  4. Layer cheese evenly over each chicken breast; sprinkle with tomatoes.
  5. Broil 1 to 2 minutes or until cheese is bubbly and browned.
  6. Sprinkle with basil; drizzle with glaze.

Side Dish Ingredients

  • 2 ears corn, shucked
  • ½ (12-oz) pkg broccoli slaw
  • 2 Tbsp to ¼ cup 2% reduced-fat plain Greek yogurt
  • 2 Tbsp balsamic vinaigrette
  • 1½ tsp fresh lemon juice

Side Dish Instructions

  1. Cook corn in boiling salted water to cover 3 minutes or until done; drain.
  2. Place slaw in a bowl. Whisk together yogurt, vinaigrette, and lemon juice; toss with slaw and salt and pepper to taste.
