Marinated Honey Mustard Chicken
Grilled Vegetable Kabobs and Whole-Grain Rolls
Ingredients
- 3 (8-oz) boneless, skinless chicken breasts
- 3 Tbsp honey
- 3 Tbsp Dijon mustard
- 2 tsp dried tarragon (or use dried rosemary)
- ¼ tsp hot pepper sauce
Instructions
- Combine chicken, honey, mustard, tarragon and pepper sauce in a large zip-top plastic freezer bag.
- Seal and turn to coat.
- Refrigerate at least 2 hours or overnight.
- Preheat grill to medium-high heat.
- Grill chicken, covered with grill lid, 10 to 12 minutes or until done, turning occasionally.
- Cut each chicken breast in half to make 6 servings.
Side Dish Ingredients
- 2 red bell peppers, cut into 1-inch pieces
- 2 zucchini, cut into 1-inch pieces
- 2 yellow squash, cut into 1-inch pieces
- 3 Tbsp balsamic vinegar
- 2 Tbsp olive oil
- 1 tsp dried oregano
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
- 6 (1.5-oz) frozen artisan whole-grain rolls
Side Dish Instructions
- Preheat grill to medium heat.
- Thread peppers, zucchini and squash alternately onto 6 (12-inch) metal skewers.
- Whisk together vinegar, oil, oregano, garlic, salt and pepper; brush half of mixture over kabobs.
- Grill kabobs, covered with grill lid, 8 minutes or until vegetables are tender, basting with remaining vinegar mixture and turning occasionally.
- Bake rolls according to package directions.
- Serve kabobs and rolls alongside chicken.
