Marinated Honey Mustard Chicken

Grilled Vegetable Kabobs and Whole-Grain Rolls

Ingredients

  • 3 (8-oz) boneless, skinless chicken breasts
  • 3 Tbsp honey
  • 3 Tbsp Dijon mustard
  • 2 tsp dried tarragon (or use dried rosemary)
  • ¼ tsp hot pepper sauce

Instructions

  1. Combine chicken, honey, mustard, tarragon and pepper sauce in a large zip-top plastic freezer bag.
  2. Seal and turn to coat.
  3. Refrigerate at least 2 hours or overnight.
  4. Preheat grill to medium-high heat.
  5. Grill chicken, covered with grill lid, 10 to 12 minutes or until done, turning occasionally.
  6. Cut each chicken breast in half to make 6 servings.

Side Dish Ingredients

  • 2 red bell peppers, cut into 1-inch pieces
  • 2 zucchini, cut into 1-inch pieces
  • 2 yellow squash, cut into 1-inch pieces
  • 3 Tbsp balsamic vinegar
  • 2 Tbsp olive oil
  • 1 tsp dried oregano
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper
  • 6 (1.5-oz) frozen artisan whole-grain rolls

Side Dish Instructions

  1. Preheat grill to medium heat.
  2. Thread peppers, zucchini and squash alternately onto 6 (12-inch) metal skewers.
  3. Whisk together vinegar, oil, oregano, garlic, salt and pepper; brush half of mixture over kabobs.
  4. Grill kabobs, covered with grill lid, 8 minutes or until vegetables are tender, basting with remaining vinegar mixture and turning occasionally.
  5. Bake rolls according to package directions.
  6. Serve kabobs and rolls alongside chicken.
