Pork Stir-Fry
Cashew Cauliflower “Rice”
Ingredients
- 2 lb boneless pork chops, sliced
- 2 Tbsp olive oil
- ½ cup water
- ⅓ cup low-sodium soy sauce
- 2 Tbsp brown sugar
- 1 Tbsp cornstarch
- 6 cloves garlic, minced
- 1 (12-oz) pkg broccoli florets
- 2 green onions, sliced
Instructions
- Cook pork in hot oil in a large skillet over medium-high heat 3 minutes or until lightly browned.
- Add water, soy sauce, sugar, cornstarch, and garlic; cook 4 to 5 minutes or until sauce is thickened.
- Meanwhile, steam broccoli according to package directions. Add to pork mixture; toss. Sprinkle with onions.
Side Dish Ingredients
- 2 (12-oz) pkg frozen riced cauliflower (such as Green Giant)
- ½ cup cashews
- 2 cloves garlic, minced
- 2 Tbsp olive oil, divided
- ¼ tsp salt
Side Dish Instructions
- Cook cauliflower according to package directions.
- Meanwhile, cook nuts and garlic in 1 Tbsp hot oil over medium heat 2 to 3 minutes or until toasted. Stir nuts, garlic, 1 Tbsp oil, and salt into cauliflower.
