Pork Stir-Fry

Ingredients

  • 2 lb boneless pork chops, sliced
  • 2 Tbsp olive oil
  • ½ cup water
  • ⅓ cup low-sodium soy sauce
  • 2 Tbsp brown sugar
  • 1 Tbsp cornstarch
  • 6 cloves garlic, minced
  • 1 (12-oz) pkg broccoli florets
  • 2 green onions, sliced

Instructions

  1. Cook pork in hot oil in a large skillet over medium-high heat 3 minutes or until lightly browned.
  2. Add water, soy sauce, sugar, cornstarch, and garlic; cook 4 to 5 minutes or until sauce is thickened.
  3. Meanwhile, steam broccoli according to package directions. Add to pork mixture; toss. Sprinkle with onions.

Side Dish Ingredients

  • 2 (12-oz) pkg frozen riced cauliflower (such as Green Giant)
  • ½ cup cashews
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil, divided
  • ¼ tsp salt

Side Dish Instructions

  1. Cook cauliflower according to package directions.
  2. Meanwhile, cook nuts and garlic in 1 Tbsp hot oil over medium heat 2 to 3 minutes or until toasted. Stir nuts, garlic, 1 Tbsp oil, and salt into cauliflower.
