Sweet-and-Spicy Basil Shrimp

Ingredients

  • ½ cup unsweetened coconut milk
  • 1½ Tbsp low-sodium soy sauce 
  • 1½ Tbsp lime juice
  • 1 Tbsp brown sugar
  • 1½ tsp Sriracha hot sauce
  • 1½ tsp grated ginger
  • 1 Tbsp olive oil
  • ¾ lb unpeeled, medium-size raw shrimp, peeled and deveined 
  • 1 red bell pepper, cut into strips
  • ⅓ cup fresh basil leaves

Instructions

  1. Whisk together milk, soy sauce, lime juice, brown sugar, and Sriracha.
  2. Cook ginger in hot oil in a large skillet over medium-high heat 1 minute or until fragrant. Add shrimp; stir-fry 3 minutes or until pink. Transfer to a bowl.
  3. Add bell pepper; cook 2 minutes. Add coconut milk mixture and shrimp to skillet.
  4. Bring to a boil; cook 1 minute or until slightly thickened. Sprinkle with basil.
  5. Serve over Cauli-Rice recipe.

Side Dish Ingredients

  • 1 (12-oz) pkg frozen riced cauliflower (such as Green Giant)
  • 1 Tbsp chicken broth
  • 1 Tbsp olive oil

Side Dish Instructions

  1. Cook cauliflower and broth, covered, in hot oil in a large skillet over medium-high heat 10 minutes. Remove from heat. Season with pepper to taste.
