Sweet-and-Spicy Basil Shrimp
Cauli-Rice
Ingredients
- ½ cup unsweetened coconut milk
- 1½ Tbsp low-sodium soy sauce
- 1½ Tbsp lime juice
- 1 Tbsp brown sugar
- 1½ tsp Sriracha hot sauce
- 1½ tsp grated ginger
- 1 Tbsp olive oil
- ¾ lb unpeeled, medium-size raw shrimp, peeled and deveined
- 1 red bell pepper, cut into strips
- ⅓ cup fresh basil leaves
Instructions
- Whisk together milk, soy sauce, lime juice, brown sugar, and Sriracha.
- Cook ginger in hot oil in a large skillet over medium-high heat 1 minute or until fragrant. Add shrimp; stir-fry 3 minutes or until pink. Transfer to a bowl.
- Add bell pepper; cook 2 minutes. Add coconut milk mixture and shrimp to skillet.
- Bring to a boil; cook 1 minute or until slightly thickened. Sprinkle with basil.
- Serve over Cauli-Rice recipe.
Side Dish Ingredients
- 1 (12-oz) pkg frozen riced cauliflower (such as Green Giant)
- 1 Tbsp chicken broth
- 1 Tbsp olive oil
Side Dish Instructions
- Cook cauliflower and broth, covered, in hot oil in a large skillet over medium-high heat 10 minutes. Remove from heat. Season with pepper to taste.
