Creamy Chipotle Slaw

Ingredients

  • ¾ lb flank steak or top sirloin, trimmed
  • 2 cloves garlic, minced
  • ¼ cup orange juice
  • 3 Tbsp soy sauce
  • 2 Tbsp lemon juice
  • ½ bunch fresh cilantro, chopped (or use flat-leaf parsley)
  • 1½ tsp chili powder
  • 1½ tsp ground cumin
  • 2 Tbsp olive oil
  • ½ cup fresh salsa

Instructions

  1. Place steak in a large zip-top plastic bag.
  2. Whisk together garlic and next 7 ingredients; reserve ½ cup garlic mixture, and chill until ready to serve.
  3. Pour remaining marinade over steak; seal and chill 8 hours or overnight.
  4. Remove steak from marinade; discard marinade. Cook in a greased cast-iron skillet or grill pan over medium-high heat 6 minutes per side or to desired doneness.
  5. Let stand 10 minutes before thinly slicing against the grain. Serve with ¼ cup garlic mixture and salsa.

Side Dish Ingredients

  • ½ (16-oz) pkg tricolor coleslaw mix
  • 2 Tbsp mayonnaise
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • 1 Tbsp chopped chipotle chiles in adobo sauce (from a 7-oz can; see Note)
  • 1½ tsp celery seed
  • ¼ tsp kosher salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Combine all ingredients in a large bowl; toss well.
