Sizzling Honey Pork Chops
Brown Rice and Berries
Ingredients
- 6 (1-inch-thick) boneless pork chops
- 2 Tbsp olive oil
- 1 tsp salt
- ½ tsp pepper
- 2 Tbsp honey
- 1 Tbsp butter, melted
- 1 Tbsp balsamic vinegar
Instructions
- Preheat oven to 425°F. Brush pork chops with oil; sprinkle with salt and pepper.
- Stir together honey, butter, and vinegar.
- Brown pork chops in a large ovenproof skillet over medium-high heat 4 minutes. Turn chops over, and brush with half of honey mixture.
- Transfer to oven. Bake 6 minutes. Turn chops, and brush with remaining honey mixture.
- Bake 10 minutes longer or until done.
Side Dish Ingredients
- 2 cups quick-cooking brown rice
- 1 cup raspberries
- 1 cup blueberries
Side Dish Instructions
- Cook rice according to package directions. Season with salt and pepper to taste.
- Rinse and toss together blueberries and raspberries; chill until ready to serve.
