Sizzling Honey Pork Chops

Ingredients

  • 6 (1-inch-thick) boneless pork chops
  • 2 Tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 2 Tbsp honey
  • 1 Tbsp butter, melted
  • 1 Tbsp balsamic vinegar

Instructions

  1. Preheat oven to 425°F. Brush pork chops with oil; sprinkle with salt and pepper.
  2. Stir together honey, butter, and vinegar.
  3. Brown pork chops in a large ovenproof skillet over medium-high heat 4 minutes. Turn chops over, and brush with half of honey mixture.
  4. Transfer to oven. Bake 6 minutes. Turn chops, and brush with remaining honey mixture.
  5. Bake 10 minutes longer or until done.

Side Dish Ingredients

  • 2 cups quick-cooking brown rice
  • 1 cup raspberries
  • 1 cup blueberries

Side Dish Instructions

  1. Cook rice according to package directions. Season with salt and pepper to taste.
  2. Rinse and toss together blueberries and raspberries; chill until ready to serve.
