Peanut Butter Waffles

Ingredients

  • 8 large eggs
  • 1 cup all-natural peanut butter
  • 3 Tbsp sour cream
  • 1 Tbsp granulated sweetener
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Cooking spray

Instructions

  1. Preheat your waffle maker.
  2. Place all the ingredients in a blender and blend until smooth.
  3. Once the waffle maker is hot, spray it with cooking spray. Pour the recommended amount of batter into each section of the waffle maker and cook according to the manufacturer’s instructions. Repeat until all the batter has been used. My waffle maker gives me roughly 5 waffles.
  4. Serve with sugar-free maple syrup, whipped cream, and/or blueberries, if desired. Store leftovers in the refrigerator for up to 1 week.
