Gavin’s Guac

Ingredients

  • 4 medium-sized ripe avocados
  • 2 cloves garlic, minced
  • ¼ cup diced red onions
  • ¼ cup diced tomatoes
  • Juice of ½ lime
  • ¼ tsp salt
  • Chopped fresh cilantro leaves
  • Drizzle of extra-virgin olive oil

Instructions

  1. Cut the avocados in half lengthwise. Remove the pits and discard. Scoop the flesh of the avocados into a large mixing bowl. Mash with a fork and set aside.
  2. Gently fold in the rest of the ingredients. I say “gently” because you don’t want to crush the tomatoes. (And I think it looks pretty when there are a few large chunks in the guac).
  3. Serve or store leftovers in the refrigerator for up to 3 days. When storing, place plastic wrap directly on top of the guac and gently press down so that there is no air. This will keep your guac from browning.
