Gavin’s Guac
Ingredients
- 4 medium-sized ripe avocados
- 2 cloves garlic, minced
- ¼ cup diced red onions
- ¼ cup diced tomatoes
- Juice of ½ lime
- ¼ tsp salt
- Chopped fresh cilantro leaves
- Drizzle of extra-virgin olive oil
Instructions
- Cut the avocados in half lengthwise. Remove the pits and discard. Scoop the flesh of the avocados into a large mixing bowl. Mash with a fork and set aside.
- Gently fold in the rest of the ingredients. I say “gently” because you don’t want to crush the tomatoes. (And I think it looks pretty when there are a few large chunks in the guac).
- Serve or store leftovers in the refrigerator for up to 3 days. When storing, place plastic wrap directly on top of the guac and gently press down so that there is no air. This will keep your guac from browning.
