Power Oatmeal
Ingredients
- 1 can coconut cream
- 2 oz macadamia pieces
- ¼ cup chia seeds
- ¼ cup flax seeds
- 2 Tbsp butter, or ghee
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- ½ tsp vanilla extract
- ¼ cup granulated sweetener
- ¼ cup heavy cream (coconut milk for dairy free option)
Instructions
- Place all the ingredients into a medium-sized saucepan on medium-high heat. Bring the mixture to a boil, whisking occasionally.
- Once boiling, reduce the heat to low. Cover and simmer until the “oatmeal” thickens, about 20 minutes.
- Serve warm or store leftovers in the refrigerator for up to 5 days.
