Power Oatmeal

Ingredients

  • 1 can coconut cream
  • 2 oz macadamia pieces
  • ¼ cup chia seeds
  • ¼ cup flax seeds
  • 2 Tbsp butter, or ghee
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • ½ tsp vanilla extract
  • ¼ cup granulated sweetener
  • ¼ cup heavy cream (coconut milk for dairy free option)

Instructions

  1. Place all the ingredients into a medium-sized saucepan on medium-high heat. Bring the mixture to a boil, whisking occasionally.
  2. Once boiling, reduce the heat to low. Cover and simmer until the “oatmeal” thickens, about 20 minutes.
  3. Serve warm or store leftovers in the refrigerator for up to 5 days.
