Strawberry Spinach Salad

Ingredients
- 1 (16-oz) pkg fresh spinach
- 6 fresh strawberries, sliced
- ¼ cup diced red onion
- 4 oz crumbled feta cheese
- ¼ cup extra-virgin olive oil
- 2 Tbsp unseasoned rice vinegar
- ¼ tsp garlic powder
- ¼ tsp granulated sweetener
- Salt and pepper to taste
Instructions
- Place the spinach, strawberries, onions, and feta cheese in a large bowl and toss to combine. Set aside.
- Make the dressing: Place the oil, vinegar, garlic powder, and sweetener in a small bowl or dressing shaker. Sprinkle with salt and pepper and whisk together or shake until everything is mixed well.
- For the dressing, pour the dressing over the salad and eat immediately. (If you’re making this dish in advance, wait to pour the dressing on top until you are ready to eat.) Store leftover salad and dressing in separate containers in the refrigerator for up to 1 week.
