Egg BLTs

Ingredients

  • 6 hard-boiled eggs
  • 3 strips bacon
  • 6 tsp mayonnaise
  • ½ cup shredded lettuce
  • 2 Roma tomatoes, sliced
  • Salt and pepper to taste

Instructions

  1. Cut the bacon strips into thirds. In a medium-sized skillet, cook the bacon until it reaches your desired doneness, about 5 minutes.
  2. Cut the hard-boiled eggs in half, lengthwise.
  3. Assemble the BLTs: Spread about ½ tsp of mayonnaise on half of an egg. Add bacon, lettuce, and tomato. Place the remaining ½ tsp of mayo on the other egg half and place on top of the tomato as if it were the top bun. Season with salt and pepper and serve.
  4. Store unassembled in the refrigerator for up to 5 days. Assemble before eating.
