Egg BLTs
Ingredients
- 6 hard-boiled eggs
- 3 strips bacon
- 6 tsp mayonnaise
- ½ cup shredded lettuce
- 2 Roma tomatoes, sliced
- Salt and pepper to taste
Instructions
- Cut the bacon strips into thirds. In a medium-sized skillet, cook the bacon until it reaches your desired doneness, about 5 minutes.
- Cut the hard-boiled eggs in half, lengthwise.
- Assemble the BLTs: Spread about ½ tsp of mayonnaise on half of an egg. Add bacon, lettuce, and tomato. Place the remaining ½ tsp of mayo on the other egg half and place on top of the tomato as if it were the top bun. Season with salt and pepper and serve.
- Store unassembled in the refrigerator for up to 5 days. Assemble before eating.
