Sausage Stuffed Peppers
Ingredients
- 1 lb ground breakfast sausage
- 1 (8-oz) pkg softened cream cheese
- 1 cup shredded Cheddar cheese
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 (16-oz) bag mini sweet peppers
Instructions
- Preheat the oven to 400˚F.
- In a medium-sized skillet, brown the sausage over medium-high heat, about 10 minutes.
- While the sausage is browning, cut each pepper in half, lengthwise. Scoop out the seeds and rinse with water to clean the peppers. Pat them dry with a paper towel and set aside.
- In a large mixing bowl, combine the cream cheese, Cheddar, onion powder and garlic powder.
- Without draining the sausage, add the browned sausage to the cheese mixture and stir until well incorporated.
- Scoop the sausage mixture into each pepper, about 1 tsp per pepper halves.
- Place the stuffed peppers on a baking sheet and bake for 11 minutes, until golden brown.
- Serve warm or store leftovers in the refrigerator for up to 5 days.
