Cooking spray
2 Tbsp coconut flour
1 Tbsp granulated sweetener
¼ tsp baking powder
¼ tsp ground cinnamon, plus more for garnish
3 Tbsp heavy whipping cream or coconut cream
1 large egg
½ tsp vanilla extract

Instructions

Spray a microwave-safe mug with cooking spray.
Place all the ingredients in a small mixing bowl and mix with a fork until well combined; the mixture should resemble cake batter.
Pour the batter into the greased mug. Microwave on high for 1 minute 20 seconds. Use a toothpick to be sure that they are cooked all the way through. If they need a little more time, simply microwave for 15 seconds extra.
Sprinkle cinnamon on top and enjoy straight from the mug.
