Grilled Basil Chicken
Squash Casserole
Ingredients
- ⅔ cup chopped fresh basil
- ⅓ cup olive-oil mayonnaise
- ⅓ cup olive oil
- 4 cloves garlic, minced
- 2 Tbsp fresh lemon juice
- ¾ tsp salt
- 6 (6-oz) boneless, skinless chicken breasts
Instructions
- Whisk together basil, mayonnaise, oil, garlic, lemon juice, and salt in a medium bowl. Pour into a zip-top plastic bag; add chicken. Seal bag, and refrigerate at least 2 hours or up to 4 hours.
- Preheat grill to medium-high heat. Remove chicken from marinade, discarding marinade.
- Grill chicken, covered, 5 to 6 minutes per side or until done.
Side Dish Ingredients
- 1 Tbsp butter
- 1¼ lb yellow squash, sliced
- ½ onion, chopped
- 2 large eggs, lightly beaten
- 2 Tbsp olive-oil mayonnaise
- ½ tsp kosher salt
- ¼ tsp pepper
- ¼ tsp garlic powder
- 1 cup shredded Cheddar cheese, divided
Side Dish Instructions
- Preheat oven to 350°F. Melt butter in a large skillet; add squash and onion. Cook 5 minutes or until squash is tender. Cool slightly.
- Stir together squash mixture, eggs, mayonnaise, salt, pepper, garlic powder, and ⅓ cup cheese.
- Pour into a greased 2-quart baking dish; top with ⅔ cup cheese.
- Bake 30 minutes or until set.
