Grilled Basil Chicken

Ingredients

  • ⅔ cup chopped fresh basil
  • ⅓ cup olive-oil mayonnaise
  • ⅓ cup olive oil
  • 4 cloves garlic, minced
  • 2 Tbsp fresh lemon juice
  • ¾ tsp salt
  • 6 (6-oz) boneless, skinless chicken breasts

Instructions

  1. Whisk together basil, mayonnaise, oil, garlic, lemon juice, and salt in a medium bowl. Pour into a zip-top plastic bag; add chicken. Seal bag, and refrigerate at least 2 hours or up to 4 hours.
  2. Preheat grill to medium-high heat. Remove chicken from marinade, discarding marinade.
  3. Grill chicken, covered, 5 to 6 minutes per side or until done.

Side Dish Ingredients

  • 1 Tbsp butter
  • 1¼ lb yellow squash, sliced
  • ½ onion, chopped
  • 2 large eggs, lightly beaten
  • 2 Tbsp olive-oil mayonnaise
  • ½ tsp kosher salt
  • ¼ tsp pepper
  • ¼ tsp garlic powder
  • 1 cup shredded Cheddar cheese, divided

Side Dish Instructions

  1. Preheat oven to 350°F. Melt butter in a large skillet; add squash and onion. Cook 5 minutes or until squash is tender. Cool slightly.
  2. Stir together squash mixture, eggs, mayonnaise, salt, pepper, garlic powder, and ⅓ cup cheese.
  3. Pour into a greased 2-quart baking dish; top with ⅔ cup cheese.
  4. Bake 30 minutes or until set.
