Beer-Cheese Sauce

Ingredients
- 3 Tbsp butter
- 3 Tbsp all-purpose flour
- ¾ cup pale ale
- 1¼ cups milk
- 3 cups shredded sharp Cheddar cheese
- 2 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- ⅛ tsp cayenne pepper
Instructions
- Melt butter in a Dutch oven over medium heat. Add flour; cook, whisking constantly, 2 minutes. Gradually add ale and milk, whisking until smooth. Cook, whisking constantly, until mixture is thick and bubbly.
- Gradually whisk in cheese until melted. Add mustard, Worcestershire, and cayenne, whisking until smooth.
