Ingredients

  • 3 Tbsp butter
  • 3 Tbsp all-purpose flour
  • ¾ cup pale ale
  • 1¼ cups milk
  • 3 cups shredded sharp Cheddar cheese
  • 2 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • ⅛ tsp cayenne pepper

Instructions

  1. Melt butter in a Dutch oven over medium heat. Add flour; cook, whisking constantly, 2 minutes. Gradually add ale and milk, whisking until smooth. Cook, whisking constantly, until mixture is thick and bubbly.
  2. Gradually whisk in cheese until melted. Add mustard, Worcestershire, and cayenne, whisking until smooth.
