Lemon-Goat Cheese Chicken

Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • 2 lemons
  • 1 (4-oz) log herb-flavored goat cheese, cut into 6 slices
  • 2 Tbsp olive oil
  • 1 Tbsp dried parsley
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 450°F. Cut a horizontal slit in thickest portion of each breast to form a pocket. Place chicken on a greased rimmed baking sheet.
  2. Cut 1 lemon into 6 slices; grate zest and squeeze juice from other lemon.
  3. Stuff chicken with cheese. Whisk together oil, lemon zest, lemon juice, parsley, salt, and pepper. Drizzle chicken with oil mixture, and top each with 1 lemon slice.
  4. Bake 15 to 20 minutes or until chicken is done.

Side Dish Ingredients

  • 1 (8.5-oz) pouch microwavable seven-whole-grains mix (such as Seeds of Change)
  • 4 large carrots, shaved into ribbons (see Note)
  • 1 fennel bulb, thinly sliced
  • ¼ cup walnut pieces
  • ¼ cup dried cranberries
  • ¼ cup poppy seed dressing (such as Brianna’s)

Side Dish Instructions

  1. Prepare grains mix according to package directions.
  2. Toss together carrots, fennel, nuts, cranberries, and dressing in a bowl. Fold in grains mix.
