Cajun Cauliflower Bowl with Lime Tahini Sauce

Ingredients
- 1½ cups white basmati rice
- 12 oz fresh green beans
- 1 lb fresh cauliflower florets
- 1 Tbsp Cajun seasoning
- 2 tsp coconut sugar
- 1 Tbsp lime juice
- ½ tsp salt (omit if your Cajun seasoning has salt)
- ¼ cup runny tahini
- ¼ cup fresh lime juice
- ½ cup fresh sliced green onions
Instructions
- Preheat the oven to 415°F and line 2 pans with parchment paper.
- Add the rice, 2¼ cups water and ½ tsp salt to a medium pot and stir well. Bring to a boil over high heat, cover with a lid and turn down to the lowest heat and simmer for 15 minutes until all the water is evaporated. Remove from the heat and keep covered for 10 minutes. Fluff with a fork.
- To a small bowl, add the Cajun seasoning, coconut sugar, salt, lime juice and 1 Tbsp water and whisk well.
- Add the cauliflower florets to a large ziplock bag with the liquid spice mixture. Shake the bag well to evenly coat the cauliflower.
- Spread the cauliflower out on the pan. Bake for 20 minutes until tender. Broil for 3-5 minutes until browned. Watch closely so they don't burn.
- Add the green beans to the other lined pan, season with salt and pepper and place on the rack beneath the cauliflower at the same time and cook 15 to 20 minutes until tender.
- For the lime tahini sauce, combine tahini, lime juice, and 4 tsp water, whisking the ingredients in a small bowl until smooth.
- To serve, add desired amount of rice, cauliflower and green beans to bowls and drizzle each with the lime tahini sauce. Add the green onions on top.
