Sweet Tea-Brined Grilled Chicken

Ingredients

  • 2 family-size tea bags
  • ¼ cup packed brown sugar
  • ¼ cup honey
  • ¼ cup kosher salt
  • 10 sprigs fresh thyme
  • 1 lemon, thinly sliced
  • 3 cloves garlic, halved
  • 1 Tbsp black peppercorns
  • 4 cups ice cubes
  • 1 (4-lb) whole chicken, cut up

Instructions

  1. Bring 4 cups water to a boil in a large saucepan; add tea bags. Remove from heat; cover and steep 10 minutes. Remove and discard tea bags.
  2. Whisk in brown sugar, honey, salt, thyme, lemon slices, garlic and peppercorns, stirring until brown sugar dissolves. Cool completely; stir in ice cubes.
  3. Place chicken pieces in a baking dish or glass bowl; pour tea mixture over chicken. Cover and refrigerate at least 24 hours.
  4. Preheat one side of grill to medium heat (300°F to 350°F). Remove chicken from marinade, discarding marinade. Place chicken, skin side down, over unlit side of grill. Grill, covered, 20 minutes.
  5. Turn chicken, and grill, covered, 40 to 50 minutes longer or until done.
  6. Transfer chicken, skin side down, to lit side of grill. Cook 2 to 3 minutes or until skin is crispy.
