Sweet Tea-Brined Grilled Chicken
Ingredients
- 2 family-size tea bags
- ¼ cup packed brown sugar
- ¼ cup honey
- ¼ cup kosher salt
- 10 sprigs fresh thyme
- 1 lemon, thinly sliced
- 3 cloves garlic, halved
- 1 Tbsp black peppercorns
- 4 cups ice cubes
- 1 (4-lb) whole chicken, cut up
Instructions
- Bring 4 cups water to a boil in a large saucepan; add tea bags. Remove from heat; cover and steep 10 minutes. Remove and discard tea bags.
- Whisk in brown sugar, honey, salt, thyme, lemon slices, garlic and peppercorns, stirring until brown sugar dissolves. Cool completely; stir in ice cubes.
- Place chicken pieces in a baking dish or glass bowl; pour tea mixture over chicken. Cover and refrigerate at least 24 hours.
- Preheat one side of grill to medium heat (300°F to 350°F). Remove chicken from marinade, discarding marinade. Place chicken, skin side down, over unlit side of grill. Grill, covered, 20 minutes.
- Turn chicken, and grill, covered, 40 to 50 minutes longer or until done.
- Transfer chicken, skin side down, to lit side of grill. Cook 2 to 3 minutes or until skin is crispy.
