Broccoli-Cheddar Cheese Frittata
Chopped Italian Salad and Garlic BreadIngredients
- 1 (12-oz) pkg broccoli florets
- 2 Tbsp minced garlic
- 2 Tbsp olive oil
- 12 large eggs, lightly beaten
- ½ cup milk
- ½ cup chopped roasted red pepper
- ¼ tsp kosher salt
- ¼ tsp crushed red pepper
- 1½ cups shredded sharp Cheddar cheese
Instructions
- Preheat oven to 375°F. Cook broccoli according to package directions.
- Meanwhile, cook garlic in hot oil in an ovenproof skillet until fragrant. Stir broccoli into garlic in skillet.
- Whisk together eggs, milk, roasted red pepper, salt, and crushed pepper in a large bowl. Gradually pour over broccoli mixture in skillet. Sprinkle with cheese.
- Transfer skillet to oven, and bake 20 minutes or until set and beginning to brown.
