Broccoli-Cheddar Cheese Frittata

Ingredients

  • 1 (12-oz) pkg broccoli florets
  • 2 Tbsp minced garlic
  • 2 Tbsp olive oil
  • 12 large eggs, lightly beaten
  • ½ cup milk
  • ½ cup chopped roasted red pepper
  • ¼ tsp kosher salt
  • ¼ tsp crushed red pepper
  • 1½ cups shredded sharp Cheddar cheese

Instructions

  1. Preheat oven to 375°F. Cook broccoli according to package directions.
  2. Meanwhile, cook garlic in hot oil in an ovenproof skillet until fragrant. Stir broccoli into garlic in skillet.
  3. Whisk together eggs, milk, roasted red pepper, salt, and crushed pepper in a large bowl. Gradually pour over broccoli mixture in skillet. Sprinkle with cheese.
  4. Transfer skillet to oven, and bake 20 minutes or until set and beginning to brown.
