Skillet Mojo Shrimp
Steamed Rice and Roasted BroccoliIngredients
- 1 Tbsp minced garlic
- ⅓ cup olive oil
- ⅓ cup orange juice
- ⅓ cup fresh lime juice
- 2 tsp ground cumin
- 1 tsp dried oregano
- 2 lb peeled and deveined, large raw shrimp
- ¼ cup chopped fresh cilantro
Instructions
- Whisk together garlic, oil, orange juice, lime juice, cumin, and oregano in a large bowl. Reserve ½ cup mixture in a small bowl.
- Add shrimp to large bowl of marinade; toss and let stand 10 minutes.
- Drain shrimp, discarding marinade. Cook shrimp in a large nonstick skillet over medium-high heat 2 minutes, stirring occasionally, until shrimp just begin to turn pink.
- Add reserved ½ cup marinade to skillet; cook 1 minute. Remove from heat, and sprinkle with cilantro; serve over rice.

- 2 (8.8-oz) pouches microwavable jasmine rice
- 2 (12-oz) pkg broccoli florets
- 2 Tbsp olive oil
Side Dish Instructions
- Heat rice according to package directions.
- Preheat oven to 400°F. Toss together broccoli and oil on a rimmed baking sheet. Bake 10 minutes or until browned and tender; season with salt and pepper to taste.
