Cheater Chicken and Dumplings
Melon and Blueberry Salad
Ingredients
- ¾ lb boneless, skinless chicken breasts
- 3 cups low-sodium chicken broth
- ¼ tsp poultry seasoning
- ¼ tsp salt
- ½ cup 2% milk
- 1 Tbsp cornstarch
- 3 low-carb soft taco-size tortillas (such as Mission Carb Balance)
- ½ cup sour cream
- 2 Tbsp chopped fresh flat-leaf parsley
Instructions
- Bring chicken, broth, seasoning, and salt to a boil in a large stockpot over medium-high heat. Reduce heat, and simmer 20 minutes or until chicken is done. Remove chicken, and shred. Return chicken to pot.
- Stir together milk and cornstarch. Stir into chicken mixture; return to a boil. Cook 5 minutes or until slightly thickened.
- Cut tortillas into 2- x 1-inch strips. Reduce heat to low. Drop tortilla strips into simmering broth, 1 at a time. Simmer, stirring often,10 minutes.
- Stir in sour cream and parsley before serving.

- ¾ cup cubed cantaloupe
- ⅓ cup blueberries
- 1 tsp lemon juice

- Combine all ingredients in a bowl; toss.
