Easy Egg and Sausage Scramble
Cauliflower Rice FrittersIngredients
- 1 (4-count) pkg fully cooked apple-chicken sausage patties (such as Al Fresco)
- 1 small red bell pepper, chopped
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- 8 large eggs, lightly beaten
- ½ (8-oz) block cream cheese, cubed
- 1 cup shredded Cheddar cheese
Instructions
- Brown sausage in a large nonstick skillet 8 minutes, turning after 4 minutes. Chop sausage.
- Sauté bell pepper and garlic in hot oil in same skillet 4 to 6 minutes. Add eggs to skillet. Cook over medium-low heat, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set.
- Stir in cream cheese and sausage. Cook 1 to 2 minutes. Season lightly with salt and pepper. Sprinkle with Cheddar.
Side Dish Ingredients
- 4 cups frozen riced cauliflower
- 2 large eggs, lightly beaten
- 4 slices bacon, cooked and crumbled
- 2 Tbsp almond flour (or use other flour)
- 3 to 4 Tbsp olive oil
Side Dish Instructions
- Sauté riced cauliflower in a large nonstick skillet coated with cooking spray over medium-high heat 4 minutes to remove excess moisture.
- Toss together cauliflower, eggs, bacon, and almond flour. Season lightly with salt and pepper. Spoon mixture by ¼ cupfuls onto same hot skillet coated with 1 Tbsp hot oil per batch.
- Cook 2 to 4 minutes per side or until golden brown. Sprinkle lightly with salt. Serve with ketchup.
