Peach-Basil Pizza with Bacon

Ingredients

  • ½ (15-oz) pkg already-rolled-out bakery pizza dough (see Note)
  • 3 slices center cut bacon, chopped
  • 2 peaches, sliced
  • 3 Tbsp balsamic vinegar, divided
  • ¼ cup pesto
  • ½ (4-oz) log goat cheese, crumbled
  • 3 Tbsp fresh basil leaves

Instructions

  1. Preheat oven to 450°F. Roll out pizza dough into a 8-inch round on a greased baking sheet; prick surface with a fork. Bake 8 minutes.
  2. Meanwhile, cook bacon in a large skillet over medium-high heat 5 to 6 minutes or until crisp, reserving ½ Tbsp drippings in skillet.
  3. Toss peaches with 2½ Tbsp vinegar. Cook in drippings 4 to 5 minutes or until browned and tender.
  4. Spread pesto on dough. Top with bacon, peaches, and cheese. Bake 5 to 7 minutes or until crust is lightly browned.
  5. Top pizza with basil; drizzle with ½ Tbsp vinegar.

Side Dish Ingredients

  • 2 Tbsp balsamic vinegar
  • 2 Tbsp extra virgin olive oil
  • ¼ tsp pepper
  • 1 (5-oz) pkg spring mix
  • ¼ cup crumbled feta cheese

Side Dish Instructions

  1. Whisk together vinegar, oil, and pepper in a large bowl. Add spring mix; toss. Sprinkle with cheese. Serve immediately.
