Peach-Basil Pizza with Bacon
Simple Balsamic SaladIngredients
- ½ (15-oz) pkg already-rolled-out bakery pizza dough (see Note)
- 3 slices center cut bacon, chopped
- 2 peaches, sliced
- 3 Tbsp balsamic vinegar, divided
- ¼ cup pesto
- ½ (4-oz) log goat cheese, crumbled
- 3 Tbsp fresh basil leaves
Instructions
- Preheat oven to 450°F. Roll out pizza dough into a 8-inch round on a greased baking sheet; prick surface with a fork. Bake 8 minutes.
- Meanwhile, cook bacon in a large skillet over medium-high heat 5 to 6 minutes or until crisp, reserving ½ Tbsp drippings in skillet.
- Toss peaches with 2½ Tbsp vinegar. Cook in drippings 4 to 5 minutes or until browned and tender.
- Spread pesto on dough. Top with bacon, peaches, and cheese. Bake 5 to 7 minutes or until crust is lightly browned.
- Top pizza with basil; drizzle with ½ Tbsp vinegar.
Side Dish Ingredients
- 2 Tbsp balsamic vinegar
- 2 Tbsp extra virgin olive oil
- ¼ tsp pepper
- 1 (5-oz) pkg spring mix
- ¼ cup crumbled feta cheese
Side Dish Instructions
- Whisk together vinegar, oil, and pepper in a large bowl. Add spring mix; toss. Sprinkle with cheese. Serve immediately.
