Shrimp and "Grits"
Collard Greens and Bacon
Ingredients
- 1½ lb peeled and deveined, large raw shrimp
- 1½ Tbsp Old Bay seasoning
- 3 Tbsp butter, divided
- 2 (12-oz) pkg frozen cauliflower florets
- ½ cup heavy cream
- ¾ cup shredded sharp Cheddar cheese
- ½ tsp onion powder
- ¼ tsp kosher salt
- ¼ tsp pepper
Instructions
- Sprinkle shrimp with seasoning. Melt 2 Tbsp butter in a large skillet over medium-high heat; cook 2 to 3 minutes or just until shrimp turn pink.
- Steam cauliflower according to package directions.
- Process cauliflower, cream, cheese, 1 Tbsp butter, onion powder, salt, and pepper in a food processor until smooth.
- Serve shrimp and grits with Collard Greens and Bacon recipe .
Side Dish Ingredients
- 4 slices bacon, chopped
- 2 shallots, sliced
- ½ tsp crushed red pepper
- 1 (16-oz) pkg chopped collard greens
- 3 Tbsp low-sodium chicken broth
- 1 Tbsp apple cider vinegar
- ½ tsp pepper
- ¼ tsp kosher salt
Side Dish Instructions
- Cook bacon in a large skillet over medium heat 8 minutes or until crisp; drain, reserving drippings in skillet.
- Add shallots and red pepper to hot drippings; sauté until shallots are tender.
- Add collard greens; sauté 5 minutes or until bright green.
- Reduce heat; stir in broth, vinegar, pepper, and salt. Cook 2 minutes or until liquid evaporates.
