Grilled Chicken Caesar Salad
Ingredients
- 2 lb boneless, skinless chicken breasts
- 1 Tbsp olive oil
- 1 Tbsp salt-free Greek seasoning
- ¼ tsp salt
- 1 (6-oz) pkg baby kale, chopped
- 2 romaine lettuce hearts, chopped
- 2 avocados, diced
- 1 cup creamy Caesar dressing
- ½ cup shaved Parmesan cheese
Instructions
- Preheat grill or grill pan to medium-high heat. Brush chicken with oil and sprinkle with seasoning and salt. Grill chicken, covered, 6 to 7 minutes per side or until chicken is done. Thinly slice.
- Combine kale, lettuce, and avocado in a large bowl. Toss with dressing.
- Divide salad among 6 plates; top with chicken and cheese.
