Grilled Chicken Caesar Salad

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • 1 Tbsp salt-free Greek seasoning
  • ¼ tsp salt
  • 1 (6-oz) pkg baby kale, chopped
  • 2 romaine lettuce hearts, chopped
  • 2 avocados, diced
  • 1 cup creamy Caesar dressing
  • ½ cup shaved Parmesan cheese

Instructions

  1. Preheat grill or grill pan to medium-high heat. Brush chicken with oil and sprinkle with seasoning and salt. Grill chicken, covered, 6 to 7 minutes per side or until chicken is done. Thinly slice.
  2. Combine kale, lettuce, and avocado in a large bowl. Toss with dressing.
  3. Divide salad among 6 plates; top with chicken and cheese.
