Teriyaki Ramen Noodle Bowls

Ingredients

  • 3 (3-oz) pkg ramen noodles (any flavor)
  • 2 boneless, skinless chicken breasts, thinly sliced (or use flank steak)
  • 3 Tbsp vegetable oil, divided
  • 3 cloves garlic, minced
  • 1 large broccoli crown, cut into small florets
  • 1½ cups shredded carrots
  • 1 cup frozen green peas, thawed
  • 1⅓ cups teriyaki glaze
  • 3 Tbsp toasted sesame seeds

Instructions

  1. Cook noodles according to package directions, omitting flavor packets.
  2. Meanwhile, sauté chicken in 2 Tbsp hot oil in a very large skillet or saucepan until done; remove from skillet. Season with salt and pepper to taste.
  3. Add garlic, broccoli, carrots, and 1 Tbsp oil to skillet; sauté until tender. Stir in chicken, peas, and teriyaki glaze.
  4. Cook 5 minutes or until thoroughly heated; stir in noodles and sesame seeds. Serve in bowls.
