Pistachio Ice Cream Sandwiches

Ingredients

  • 1 (12-oz) pkg shelled pistachios, chopped
  • 1 (14.3-oz) pkg chocolate cream-filled sandwich cookies
  • 1 (48-oz) container pistachio ice cream, slightly thawed

Instructions

  1. Line a baking sheet or pan with parchment paper; place in freezer. Place nuts in a shallow bowl.
  2. Twist open sandwich cookies (do not remove cream filling). Place a small scoop of ice cream on filling. Top with cookies. Immediately roll edges in nuts, and place on baking sheet in freezer.
  3. Repeat with remaining cookies and ice cream, returning baking sheet to freezer between batches. Freeze until ready to serve.
