Strawberry-Peach Hand Pies

Ingredients

  • 2 peaches, peeled and chopped
  • 2 cups chopped strawberries
  • ⅓ cup sugar
  • 3 Tbsp cornstarch
  • ½ tsp ground cinnamon
  • ½ tsp almond extract (or use vanilla)
  • 1 (14.1-oz) pkg refrigerated piecrusts, thawed
  • 1 large egg, lightly beaten

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper. Stir together peaches, strawberries, sugar, cornstarch, cinnamon, and almond extract in a bowl until coated.
  2. Unroll crusts on a lightly floured surface. Cut into rounds using a 4- or 5-inch round cookie cutter. Spoon filling onto one side of each round.
  3. Fold dough over filling, and seal. Crimp edges with a fork. Cut two small slits in top of each pie for steam to escape. Arrange 1 inch apart on prepared baking sheet. Brush with egg.
  4. Bake 20 minutes or until golden brown. Cool slightly. Serve warm.
