Strawberry-Peach Hand Pies
Ingredients
- 2 peaches, peeled and chopped
- 2 cups chopped strawberries
- ⅓ cup sugar
- 3 Tbsp cornstarch
- ½ tsp ground cinnamon
- ½ tsp almond extract (or use vanilla)
- 1 (14.1-oz) pkg refrigerated piecrusts, thawed
- 1 large egg, lightly beaten
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper. Stir together peaches, strawberries, sugar, cornstarch, cinnamon, and almond extract in a bowl until coated.
- Unroll crusts on a lightly floured surface. Cut into rounds using a 4- or 5-inch round cookie cutter. Spoon filling onto one side of each round.
- Fold dough over filling, and seal. Crimp edges with a fork. Cut two small slits in top of each pie for steam to escape. Arrange 1 inch apart on prepared baking sheet. Brush with egg.
- Bake 20 minutes or until golden brown. Cool slightly. Serve warm.
