Salmon with Dill-Yogurt Sauce
Fruit and Nut Basmati RiceIngredients
- 3 (6-oz) salmon fillets
- 1 Tbsp olive oil, divided
- ¼ tsp garlic powder
- ¼ tsp salt
- ¼ cup plain Greek yogurt
- 1½ Tbsp lemon juice
- 1 Tbsp chopped fresh dill
Instructions
- Coat fish with 1 tsp oil, and sprinkle with garlic powder and salt.
- Cook fish in 2 tsp hot oil in a large skillet over medium-high heat 4 to 5 minutes until browned and crisp. Flip and cook 3 minutes or until fish flakes with a fork.
- Meanwhile, combine yogurt, lemon juice, and dill. Serve with fish.
Side Dish Ingredients
- 1 (8.5-oz) pouch microwavable basmati rice
- 3 Tbsp golden raisins (or use dried cranberries)
- 3 Tbsp chopped pistachios
- 2 Tbsp olive oil
- 2 tsp ground turmeric
- ¼ tsp salt
Side Dish Instructions
- Cook rice according to package directions. Stir in remaining ingredients.
