Southwest Sausage Hash Bowls

Ingredients

  • 1 (20-oz) pkg refrigerated diced potatoes with onion (such as Simply Potatoes)
  • 2 Tbsp olive oil, divided
  • 1 (12-oz) pkg chicken sausage, sliced
  • ½ onion, diced
  • 1 red bell pepper, diced
  • ½ (4-oz) can diced mild green chiles
  • ½ tsp garlic powder
  • 1½ cups baby spinach

Instructions

  1. Preheat oven to 450°F. Spread potatoes in a single layer on a baking sheet; drizzle with 1½ Tbsp oil. Bake 15 to 20 minutes.
  2. Meanwhile, cook sausage in ½ Tbsp hot oil in a large skillet 3 minutes. Add onion, bell pepper, chiles, and garlic powder. Cook 8 to 12 minutes or until onion and peppers are browned. Stir in spinach, and cook until wilted.
  3. Serve sausage mixture over potatoes.
