Southwest Sausage Hash Bowls

Ingredients
- 1 (20-oz) pkg refrigerated diced potatoes with onion (such as Simply Potatoes)
- 2 Tbsp olive oil, divided
- 1 (12-oz) pkg chicken sausage, sliced
- ½ onion, diced
- 1 red bell pepper, diced
- ½ (4-oz) can diced mild green chiles
- ½ tsp garlic powder
- 1½ cups baby spinach
Instructions
- Preheat oven to 450°F. Spread potatoes in a single layer on a baking sheet; drizzle with 1½ Tbsp oil. Bake 15 to 20 minutes.
- Meanwhile, cook sausage in ½ Tbsp hot oil in a large skillet 3 minutes. Add onion, bell pepper, chiles, and garlic powder. Cook 8 to 12 minutes or until onion and peppers are browned. Stir in spinach, and cook until wilted.
- Serve sausage mixture over potatoes.
